Back before we could go buy nearly everything at a supermarket all year round, we grew many of our own vegetables and fruits and tried to find ways to preserve them after an abundant harvest. Pickles are preserved cukes that won't make you sick or kill you. Sauerkraut is preserved cabbage. Hams and bacon are preserved pork, as are most all salume and other smoked or salted and cured sausages. We survived the winter eating these and many other summer products. We don't need to preserve food anymore, but we keep eating preserved and cured foods because we like to eat them. Olives aren't edible without processing and curing. I still like them. Plant a few cucumber seeds and then figure out what you will do with the harvest when your crop reaches its peak. Your neighbors will hide when they see you coming trying to give yet more of them away.
